Using VVV+Github to keep files synced between local and web: how to update WordPress core?

Hi all.  I have VVV installed locally and use it to develop WordPress sites.  I use Github to keep my local wp-content folder synced with the wp-content folder on my web server.  But when a WP core update is released, it modifies files outside of the wp-content folder, so I need to carry out the same update manually twice:  on my local machine and my web server.  Is there a technique or method I can employ to eliminate this inefficiency?  I thought about syncing my entire WordPress directory, instead of just the wp-content folder.  But if I do that, it begins to keep wp-config.php in-sync between the two locations.  I believe this will create an issue, since this file appears to contain some information unique to each installation (ssh keys and such)--it doesn't look like this is a file that should be kept in-sync between the two.  I could be wrong though.
